آنزيم ليپاز در توليد مواد غذايي، افزاينده‌هاي طعم و بو، مواد شوينده، آرايشي و بهداشتي، داروسازي به كار مي‌رود. يک مانع عمومي براي توليد آنزيم هاي تجاري پايداري کم محلول هاي مايع آنزيم ها است. در اين تحقيق فرایند پايين دستي براي بدست آوردن پودر آنزيم ليپاز خشک شده پاششي پايدار مخمر Yarrowia lipolytica بررسي مي شود. به نمونه هاي محلول آنزيمي غلظت هاي مختلف صمغ عربي و پودر شير خشک براي خشک کردن پاششي اضافه شدند. نمونه ها در يک خشک کن پاششي با دماهاي ورودي و خروجي 175 و 85 درجه سانتيگراد با جريان 15 ليتر در ساعت خشک شدند. بهترين پودر ليپاز از خشک کردن پاششي با فرمول 3 درصد صمغ عربي و 9 درصد شير خشک نسبت به ساير فرمول ها به دست آمد. نتايج نشان داد که پودرهاي ليپاز خشک شده پاششي Y. lipolytica داراي بازده خوبي براي کاربردهاي مختلف است.
